Maple Almond Granola


My youngest brother requested that I post this recipe quite a while ago.  After reading my mom’s post about the wonders of fall, I was inspired to whip up another batch of this granola so I too could enjoy the aromas of a cozy fall kitchen.

Maple Almond Granola
4 c. oats
1 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1/4 c. flax seeds or wheat germ
1/3 c. chopped almonds
1/2 c. maple syrup
1/4 c. agave nectar
1/4 c. water
2 Tbsp. brown sugar
2 Tbsp. oil
1 c. dried apples
1/2 c. dried currants

Combine first 6 ingredients in a large bowl.  Mix together maple syrup, agave nectar, water and brown sugar in a small saucepan.  Bring to a boil.  Pour liquid mixture over oat mixture and stir well.  Spread oat mixture on a cookie sheet lined with parchment paper or sprayed with cooking spray and bake at 325º for 30 minutes or until golden brown, stirring every 10 minutes.  Place granola in a large bowl and stir in dried fruits.  Cool completely before storing.
