Celebrate National Maple Syrup Day!! Maple Cream Candy


Did you know that today is National Maple Syrup day?! Neither did I.  I was really expecting this to sneak up on us sometime in March, when the trees are tapped and sap is boiling.  But December 17 it is!

In case you haven’t noticed, I LOVE maple syrup.  Liquid gold as my family calls it.  I am planning to make the Maple Cream Candy later today to celebrate.  You should too.  But if candy isn’t your thing (really? really?) you could try one of these VVG recipes:
Hot Maple Souffles (so impressive! and delicious! and boozy!)
Spicy Almond Cashew Maple Popcorn
Chai Tea (yes, chai tea)
Maple Almond Granola

Or, you could celebrate in your own special maple syrup way.  But let me know what that recipe is so I can try it!

Maple Cream Candy
2 c maple syrup
1 c heavy cream
1/2 c pecans, optional
1 tsp. vanilla

Boil syrup and cream until it reaches 238 degrees on a candy thermometer (soft ball stage). Stir often.  Cool until lukewarm (110 degrees). Add nuts and vanilla and beat until thick and creamy (by hand).  Pour into a buttered pan and cut into squares.

    • You can enjoy the fruits of my labor this week if you’d like. I will never be making this candy again. It is delicious, but I’ve decided that my brother Ned makes it better than I do. You have to stir it for 30 minutes! Good grief! There is a lot of labor in these!!

  2. I just got some maple syrup from my share this week! The following snack recipe does not contain a large quantity of syrup, but that just means you can save the rest for future maple syrup-y recipes. I’m going to serve this sweet and spicy nut mix at my cookie swap this weekend. Wish you could, Alyssa!
